Vegetables are an important staple of a healthy diet! Find every excuse to use lots of fresh raw veggies in your salad every time you sit down to dinner. It’s the best way to ensure that you include lots and lots of veggies, and a great variety of them, in your diet without any fuss–a little extra virgin olive oil and a splash of balsamic vinegar, or fresh lemon juice and there you have it! Don’t forget to include raw veggies in your snacks too!
I prefer to use organic, local produce, mostly because it is gentler and kinder to the planet! It’s a topic dear to my husband as well. In fact, we have our home grown little garden in our own backyard. This year I have also joined a CSA program (Community Supported Agriculture) which enables consumers access to fresh produce directly from the farmer for a cost. So I look forward to getting my basket of fresh-picked produce, every week and come up with recipes as I go, guided only by what’s best that week! Isn’t that fun?
But, having said that, if you cannot find organic produce in your area, or cannot afford it, please, do not make perfect the enemy of good (read on)! Best to eat lots of veggies, even if grown conventionally, then omit them from your diet all together-so no excuses!

I have two kids that are too picky when it comes to vegetables. I can’t make them eat an entire week with varied vegetables at least one meal a day. Veggie Tuna Pasta Salad is very enticing for me. I’ve been a lover of vegetables ever since but honestly all of my recipes have gone boring and too common. I’ve never imagine eating veggies could be this creative and fun.
