Spinach is a SUPERB veggie! Our little furry guinea pigs Charlotte and Bianco could have told you that!

Charlotte is the black and white one under Rebecca’s care, and Bianco is the tan and white one under Corinda’s. This was back in 1992! Scroll down for a picture of Rebecca and Corinda now!
Spinach is filled with nutrients and even claims a special place among vegetables in terms of its phytonutrient content. It is also rich in vitamins, minerals and antioxidants and is a very good source of dietary fiber.
I don’t know if Charlotte and Bianco knew all that but they certainly loved it, and who knows, spinach may have contributed to their long life!
This week, I am posting a bunch of recipes featuring spinach, some raw, some cooked, but all so different from one another yet each so deliciously nutritious!
Raw baby spinach makes a wonderful salad!
So just be creative: simply add fresh cut veggies, or even fresh fruit such as fresh sliced strawberries, or pears! You can also add some chopped nuts–walnuts, pecans or almonds– and a little sprinkle of goat cheese or gorgonzola (little is key!).
Drizzle a little extra virgin olive oil and balsamic vinegar over it all….and you have yourself a delicious and extremely nutritious and filling salad!
Another great way to eat spinach raw is in my fresh Spinach Dip! It’s so simple, quick and really yummy!
My Spinach Pear Smoothie also uses raw baby spinach and ripe pear and the result is so refreshing and satisfying! It feels like a cleansing for your whole body!
I also love to “throw” in some fresh baby spinach in my omelets, it’s so quick & easy!
