Morning Glory Power Smoothie

I absolutely LOVE this smoothie! It’s the makings of a classic morning glory muffin in a blender!! YUM!!! It’s a complete breakfast filled with protein from the lentils, soy milk and rolled oats and, of course (you know me by now!), you don’t even know they are there!

Morning Glory Smoothie

* you can also make it with almond milk, if you prefer (plain unsweetened of course!)

Serves: 1 big smoothie
Ingredients
  • ½ cup 100% carrot juice (organic)
  • ⅓ cup soy milk (unsweetened)*
  • ½ cup crushed pineapple with its juice (unsweetened)
  • ¼ cup shredded coconut (unsweetened)
  • 2 Tbsp rolled oats
  • 2 Tbsp canned lentils (rinsed and drained)
  • 2 medjool dates (pitted)
  • ¼ tsp ground Cinnamon
  • 1 cup ice
Instructions
  1. Place all the ingredients in a blender and process until creamy

    Hi Catherine
    Question on this smoothie. I need power smoothies and so I like your smotthies with the oats and lentils added in. Why did you choose soymilk here? Did you try different milks like coconut or almond and it didnt taste right. Just wondering if the change would really alter the taste. No one in my house will drink soy milk.
