I love my vegan galette crust so much, I am always looking for ripe fruit in season to whip it up on the spot! I have made it with pears, apples, peaches and nectarines and of course strawberries, the inspiration for my original classic vegan rustic strawberry galette. Here is my latest variation, made with fresh cherries: WOW…absolutely delicious! It’s true, it’s a little more work because you have to pit the cherries one by one, but it’s so worth it! The ripe cherries give out their thick juices and coat the “buttery” crust to perfection! It’s a gem, just look at the photo…need I say more?

Fresh Cherry Galette

I have made it with pears, apples, peaches and nectarines and of course strawberries, the inspiration for my original classic vegan rustic strawberry galette. The ripe cherries give out their thick juices and coat the “buttery” crust to perfection!

Ingredients

  • Dough
  • 1 cup whole wheat pastry flour
  • 1/4 cup confectioner sugar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup white wine
  • Custard
  • 1/3 cup unsweetened applesauce
  • 2 Tbsp almond meal
  • 1/2 tsp pure vanilla extract
  • Topping:
  • 12-15 fresh cherries rinsed pitted, halved
  • 1 Tbsp granulated sugar

Instructions

  • Preheat oven 400F
  • Dough:
  • Place all the dough ingredients in the bowl of a food processor and process until a soft ball forms (30 seconds). The dough will be sticky, that's OK--sprinkle it with a little flour (no more than 1 Tbsp flour), enough to gather it in your hands and make it into a ball.
  • Place it on a piece of parchment paper and using a rolling pin, gently roll into a circle about 7 inch in diameter--it doesn't have to be perfect.
  • Transfer onto baking sheet.
  • Custard:
  • Mix applesauce, almond meal and vanilla extract and stir well with a spoon until thoroughly mixed.
  • Assembling:
  • Spread the custard evenly over the dough to within about 1/2 inch of the edge.
  • Spread the halved cherries in one layer, no need to arrange them in any way, they will be naturally beautiful.
  • Fold the edge of the dough up over the cherries to create a little border (see little video clip below).
  • Sprinkle the granulated sugar on top of the cherries and folded edge.
  • Bake in preheated oven for 25 minutes or until the cherries are juicy and tender and the crust is golden.
  • Sprinkle with a dusting of confectioner sugar for presentation if you'd like!

    Hi Catherine,

    I made this today for my younger foodie friends and they really enjoyed it. Since I cannot eat gluten, I made the crust gluten free using a basic pre made mix. The crust may not be as airy as wheat would be but it was tasty and held quite well. I also used luscious big organic blackberries that were super YUM. Since I did not have vanilla on hand, I used my Persian rose water and liked the compliment of flavor. I made applesauce using one organic apple which made almost one perfect 1/3 of a cup. The Galette was super simple to make and a joy to eat! Thank you! Jill

    P.S. For some reason when I try to fill in the hearts at the bottom it never allows me to write the recipe. I would give it six hearts

    What would be a good substitute for the almond meal? I can’t use it because of an almond allergy in one of my family members. I really want to try this recipe! Thank you!

      Hm Sheila, let me think…Is it just almonds they are allergic to? if it’s not a general nut allergy, then, I would say to grind up some hazelnuts instead and that will work perfectly. If it is a nut allergy, then, you could try, ground up unsweetened dry coconut? I have never tried so I am not sure, but please please let me know how it goes for you!!! I just LOVE this recipe!! 🙂

        I made an apple-fig galette with a sprinkle of walnuts for my sister’s birthday this week.

        This recipe is so easy and such a crowdpleaser! I made them through the whole pandemic year of 2020 with fruits that were in season (berries, cherries, peaches, nectarines, plums, pears, apples). They satisfy my desire for desert without ramping up cravings for sweets.

        At times I have made this recipe with Bob’s gluten-free flour and some xanthan gum. It wasn’t as tasty a crust, but it worked for my guest who has celiac disease.

      Hi Lynette, I haven’t tried to make it gluten-free because gluten is not a issue in our family, but I bet it would work out just fine with Bob’s red Mills gluten free flour. I would LOVE for you to try it and let me know! will you?

I miss you 🙂 We are still dealing with some family health issues which is why I have been a little less productive on Cuisinicity, but I always read my comments–in fact, they help me as they are always so kind and encouraging.
