Now that’s wonderful fast food–Perfectly crispy on the outside, tender and juicy on the inside! Kids devour these chicken tenders! This breading is a delicious-nutritious substitution for the typical commercially available packaged bread crumbs which contain little or no fiber, include flavor enhancers and additives, lots of salt and sugar and even partially hydrogenated oils as well. Of course kids have absolutely no idea they are eating their whole grains and adding fiber to their dinner, not that they actually care, but you do! For a wonderful variation, you can replace the chicken with 1 lb fresh Cod Loin (Captain’s cut works best). These go well with plain sweet corn, or the Baked French fries or grilled veggies you’ll find in my side dishes.
Crispy Chicken Tenders
Ingredients
- 4 free-range boneless half chicken breasts no skin
- 1 cup Nature’s Path® multigrain cereal
- 1 cup Kashi TLC Original 7-grain crackers
- 2 egg whites lightly beaten
- 2 Tbsp extra virgin olive oil
Instructions
- Wash and pat dry chicken breasts, lightly salt and pepper.
- Place cereal and crackers in a food processor and grind finely to make crumbs.
- Place the cereal/cracker crumbs on a flat plate.
- In a wide shallow dish, whisk the egg whites lightly with a fork.
- Dip each piece of chicken first in the egg whites, then in the cereal cracker crumbs, making sure to coat all sides well, pressing the crumbs firmly into the flesh.
- Discard extra cereal/cracker crumbs.
- Heat olive oil in a large non stick pan and sear the chicken over medium high heat for 3 minutes on each side to brown.
- Turn off the stove and let it stand in the hot pan for another 2 minutes and serve.

I was just searching through your recipe index for some new ideas to try, and I saw that your chicken tenders recipe didn’t have a rating yet. I make these – a lot – and my four year old loves them! They are yummy and easy. This recipe definitely deserves a 5-heart rating 🙂
