The rich almond flavor in this French toast gives it just the perfect touch!  I make it with a wholegrain bread  (click here for the one I like best) that is high in fiber, low in salt, low in sugar, and has no partially hydrogenated oils (even has lentils, and you know how I feel about those!).  This recipe is just enough for 2 slices, and I mean it, the bread will soak it up to the last drop. I like to serve it with fresh strawberries but any other fresh sliced fruit will also do….so YUMMY!

*Alvarado Street Bakery California Style Complete Protein

Serves: 1 serving: 2 slices
Ingredients
  • 2 slices 100% wholegrain bread*
  • 1 free range large egg (organic, pasture-raised)
  • 1 Tbsp unsweetened almond milk (plain)
  • 1 Tbsp almond meal
  • 1 drop of vanilla extract
  • 2 tsp smart balance spread (regular)
  • ½ tsp confectioner sugar (optional)
Instructions
  1. In a shallow bowl, whisk the egg with the almond milk, almond meal and vanilla extract.
  2. Dip each slice of bread in the egg mixture, coating both sides equally. Set aside.
  3. Heat the smart balance spread in a non-stick skillet large enough to hold both pieces of bread. Add the bread and cook on medium heat for 2-3 minutes on each side.
  4. To serve, dust with the confectioner sugar.

    I’m in the process of changing my diet after watching your husband on the video series Awakening from Alzheimer’s. I saw this recipe, and was wondering if I can make enough to last me a week to have for breakfast as I change my course in eating? This way I can heat then in the toaster before work.
