This is my son Gabe’s favorite Oatmeal every school day for breakfast! He is my growing boy–I swear he looks like he is growing an inch each day– and I feel good having his belly full with all that good fiber and protein to tackle the day. I make this simple oatmeal from scratch every morning, using plain rolled oats, before he goes to school in the morning and it literally takes 4 minutes. There is no need to spend money on store-bought-flavored-instant oatmeal packets–even the organic natural brands that I love for their other products always add salt (except for one!*), which is absolutely unnecessary and don’t end up really saving time. This is that quick and simple!
**addendum: I just found ONE wonderful product that doesn’t use any salt or sugar (it goes to show, you don’t need it) that is so yummy and is filled with fiber! If you like it a little sweeter, just add your own drizzle of honey or 100% pure maple syrup, that’s it!
Simply Oatmeal
Ingredients
- 1 cup water
- 2/3 cup old-fashioned rolled oats not the quick-cooking ones
- 1 Tbsp fine ground walnuts
- 1 Tbsp raisins
- 1/2 sliced banana
- any sliced fresh fruit
Instructions
- Bring water to a quick boil
- Add the rolled oats and let it boil uncovered for 1 minute (it will "foam", so lower the heat a little bit or just make sure it doesn't boil over).
- Turn off the stove and cover for 3 minutes or until ready to serve.
- Transfer to a bowl and add raisins, walnuts, sliced banana and cinnamon and top with any fresh sliced fruit.

This is my other go to weekday breakfast when I don’t have time for the porridge or I’m out of the steel cut oats. Easy and delicious!
Catherine, when you put the cover on for 3 minutes, have you turned off the heat? or do you let it simmer for 3 minutes?
Was not sure, as I would normally cook a bit longer than 1 minute.
I sometimes grate a little ginger in mine.
Hi Krystina! Yes, I cook it for just 1 minute, then turn off the stove and cover for 3 minutes. That’s all it needs because by the time you transfer the oatmeal to a little bowl and are able to eat it after it has cooled down for a couple minutes, it is perfectly cooked and has that nice creamy consistency that blends well with the brown sugar and cinnamon. But you are right, I was not clear in my recipe so I am going to fix that right now!!! Thank you for bringing that up! I love the fresh grated ginger touch, yum!
