Chicken in Creamy Dijon Sauce

This is a lusciously rich and creamy dish that (I think you know by now!) has no cream in it. The vermouth wine and mustard are just a classic blend–I didn’t invent anything here! It’s  very easy to throw together, you just have to have everything on hand on the counter. I like to serve this chicken with cooked organic Farro  and Grilled veggies on the side. If you are so lucky to have leftovers, it’s great cold in a sandwich with a hearty multigrain bread, lettuce and tomato for next day’s lunch. Definitely no need for extra mustard or mayo here!

Note that there is no need to add salt to this dish as there is enough already in the mustard, broth and yogurt to give it the flavor it needs.

Ingredients
  • 2 free-range whole chicken breasts boneless/skinless (about 20 oz)
  • 2 Tbsp olive oil
  • ½ cup vermouth or white wine
  • ⅓ cup fat free chicken broth (no added sugar)
  • 1 Tbsp Dijon mustard
  • 2 Tsp grainy mustard
  • ¼ cup fat free plain greek yogurt
  • fresh ground pepper to taste
Instructions
  1. Rinse and pat dry the chicken and cut in half lengthwise.
  2. Place the olive oil in a large non-stick pan and sautée the chicken breasts for 3 minutes on each side until lightly browned but not completely cooked through; transfer to a plate and set aside.
  3. Add the chicken broth and vermouth/white wine (in that order) to the same pan, and bring to a boil.
  4. Reduce the heat and stir in the greek yogurt, dijon mustard and whole grain mustard.
  5. Place the chicken back in the pan. Spoon the sauce over each chicken breast and simmer for 10 minutes, uncovered.
  6. When ready to serve, I like to slice up the chicken at an angle, as shown in the photo, spoon the sauce over it, and top with fresh ground pepper.

    I made an extra big helping of this recipe – quadrupled it in fact. My son told me later that he enjoyed it and would eat it again. This is what I needed to hear because there’s leftovers in the fridge now for tomorrow, which he will eat, being home alone. Thanks serving up another goto recipe, Catherine.

    This turned out fantastic! I made this and the lemon pistachio chicken in the same night since it required similar ingredients. We ate a little of each and froze all the rest which we ate the following week.

    Greetings! I am new to Cuisinicity. I recently made the Chicken in Creamy Dijon Sauce and it is a hit! I had skinless boneless chicken tenders in the freezer so I used them instead of the whole chicken breast. I had also recently cooked some homemade chicken broth so I used it instead of store-bought!     I can only hope that the chicken breasts I used were much smaller than average. I made this tonight and shamefully ate all 4 pieces of chicken. GREAT recipe!!
