I am so excited to present my Mediterranean Couscous Salad today because I am here with my Tatie Dan Dan who just came to visit from France! As you know by now, she is my inspiration and my master Chef who taught me absolutely everything I know in the kitchen!

I loved watching you and Tati make this fabulous recipe. Instead of going out to dinner for my birthday, my husband and I watched the video and made this recipe together( he is a great cook so this time I taught him something with the help of you and Tati!)

This looks fabulous!!! Loved watching the joy, love & enthusiasm that went into making this recipe too!!! If one has to avoid wheat/gluten is there another ingredient that can be substituted for the couscous? Would quinoa adsorb the citrus juices & olive oil? Thank you for any suggestions on making this acceptable for those who have to be gluten free (all the other ingredients are perfect). Best wishes, Sharon

Quinoa would not work raw because it just would stay hard and not absorb the dressing as does couscous or even bulgur wheat, so I would recommend first cooking the quinoa, using my no-fail 8-minute simply quinoa recipe here: (so that it’s not mushy, but just perfectly cooked)

This looks amazing! I can’t wait to try it. My husband doesn’t care for bell peppers though (I love them). Would it be okay to substitute cucumbers for the bell peppers?
