I have to admit, this recipe astounded me! These muffins are the vegan version of one of my very favorite recipes–my Dark Chocolate Cake–that I created years ago and can make with my eyes closed! So you can imagine this was a hard act to follow and I was…skeptical, at best!
First, the muffins rose in the oven and then, when they came out….they “deflated” (and I thought, argh, no, there goes my Vegan baking!) but really, that’s what created their unique dark rich dense outrageous lusciousness… perfect for that Easter brunch …I LOVE ’em!!!!

I just wanted to stop in a moment and say thank you. The videos are a wonderful addition to your site — so homey and personable. Makes me want to sit at your table and share a cup of coffee. I have a passion for baking and recipe development, and play around with recipes like you do, to lower sugar and replace refined ingredients with more wholesome wherever it works to do so.
For the past year or so, I’ve been experimenting with coconut sugar. If you haven’t tried it, it looks, smells and tastes like a cross between brown sugar and graham cracker crumbs. If I’m not mistaken, it is dried sap from coconut trees. Unrefined, and it works great in muffins such as these. But I’m wondering if it really is a wiser choice, or is it just another marketing campaign designed to take advantage of our desire to eat better? The benefits claimed include: low glycemic, potassium and B vitamins. It is still sugar, so I have no delusions about that, but what kind of sugar, and does it impact our gut flora? It has the same calories and grams of sugars, but is it better for us than sucrose (granulated sugar)? These are a lot of questions, I know, and I’m not expecting you to have all the answers, but I would love to know your thoughts.

As for the coconut sugar, my instinct is the same as yours on this– no delusions– but I actually do not know the answer to your valid question. I will ask my husband who is the expert of course and I will get back to you.
