If you love carrots, you will love this recipe! Actually, even if you don’t love carrots…HAHAHAH!! Really, I mean it! There is something so special about gently simmering pure carrot juice!
I don’t exactly remember now how I created this recipe originally because this is one of my old stand-by that I created ions ago! My guess is that it was when I had extra carrots in the house I didn’t know what to do with! In any case, I am glad I did: It is truly a little gem of a dish!
I don’t always take the time to juice my own carrots, and that’s absolutely OK, as long as you use 100% carrot juice (organic)! If you have the extra time, and even if you don’t have a fancy juicer, you can make your own! My wonderful friends at Naturally Savvy (check out their beautiful website!) told me about this link (click here) that shows you how to make it in your own blender–nothing fancy–and it works!

The Carrot Quinoa Lentils is one of my favorite dishes, love it however my understanding is Quinoa Is is a seed that is harvested from a species of a plant called goosefoot. It is officially a seed and part of a group of pseudocereals, making it neither a cereal nor a grain, and more closely related to spinach and beets than to cereals or grains. Whatever it is I love it and use it a lot.
