Ingredients
1large fennel bulbrinsed and sliced thinly*
1green appleskin on, rinsed and grated coarsely
1/4cupchopped walnuts
Vinaigrette:
1/4tspdijon mustard
2Tbspapple cider vinegar
1Tbsp100% organic apple cider
3Tbspextra virgin olive oil
1/8tspsalt
Instructions
Place all the vinaigrette ingredients in a medium salad bowl and whisk briskly.
Place the thinly sliced fennel, grated apple and chopped walnuts on top of the vinaigrette and toss to coat well.
