Crispy Chicken Tenders
Serves: 4
  • 4 free-range boneless half chicken breasts (no skin)
  • 1 cup Nature’s Path® multigrain cereal
  • 1 cup Kashi TLC Original 7-grain crackers
  • 2 egg whites, lightly beaten
  • 2 Tbsp extra virgin olive oil
  1. Wash and pat dry chicken breasts, lightly salt and pepper.
  2. Place cereal and crackers in a food processor and grind finely to make crumbs.
  3. Place the cereal/cracker crumbs on a flat plate.
  4. In a wide shallow dish, whisk the egg whites lightly with a fork.
  5. Dip each piece of chicken first in the egg whites, then in the cereal cracker crumbs, making sure to coat all sides well, pressing the crumbs firmly into the flesh.
  6. Discard extra cereal/cracker crumbs.
  7. Heat olive oil in a large non stick pan and sear the chicken over medium high heat for 3 minutes on each side to brown.
  8. Turn off the stove and let it stand in the hot pan for another 2 minutes and serve.
