If you love carrots, you will love this recipe! Actually, even if you don’t love carrots…HAHAHAH!! Really, I mean it! There is something so special about gently simmering pure carrot juice!
I don’t exactly remember now how I created this recipe originally because this is one of my old stand-by that I created ions ago! My guess is that it was when I had extra carrots in the house I didn’t know what to do with! In any case, I am glad I did: It is truly a little gem of a dish!
I don’t always take the time to juice my own carrots, and that’s absolutely OK, as long as you use 100% carrot juice (organic)! If you have the extra time, and even if you don’t have a fancy juicer, you can make your own!
